Just want to take a minute to plug this. TL;DR version: Sear one side of the steak in a pan, then finish in the oven at 200°F. I tried this last week but since I was in a hurry I upped the temperature to 250°F and, predictably, overcooked my steak. This week I gave myself plenty of time. The recipe says 30-60 minutes, but it took my oven at LEAST an hour and a half (I lost track of the total time but I kept checking every 15 minutes) to cook my steak to 130-135°F and oh my god, this was the best, most buttery and delicious steak I’ve had in recent memory. And it was only seasoned with salt and pepper. Nothing else was needed. TRY IT!!!! (And report back to me!)
